A sool jib is where Seoul slows down after work. Lights drop, the kitchen stays open, and a bottle is something you finish — not something you order in a hurry. We took that idea, and we set it down on a quiet block of Koreatown.
Anju we'd cook for our own friends. Sool from makers we know by name. Music quiet enough to hear the next table laugh. The room is the welcome — we just keep the lights low and the rice wine cold.
